At this time of year when there’s not much better than fresh apples and apple cider from a local orchard. This week Sarah French shows us that apple cider bars are What’s Cooking at Boston Common Coffee.

Mulling the cider:

  • 1 gallon apple cider
  • 4 cinnamon sticks
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup brown sugar
  • 1 teaspoon cloves

Place all together in a pot and bring to a boil.  Remove from the heat and cover for 15 minutes. Strain.

Crust:

  • 3 1/2 cups all purpose flour
  • 1/2 cup confectioners sugar
  • 1 1/2 teaspoons salt
  • 1 pound of unsalted butter
  • Mix all ingredients together until the mixture becomes a dough.

Press the dough into a parchment lined 17 1/2″ x 12 1/2″ rimmed baking sheet. Bake in a 350 degree oven until golden, 20-30 minutes.

Filling:

  • 8 eggs
  • 4 cups sugar
  • 1 1/2 cups mulled cider
  • 2/3 cups flour
  1. Whisk together the eggs, sugar and flour until combined. Whisk in the cider.
  2. Pour the filling over the prebaked crust.
  3. Bake in the same 350 degree oven until the center is set, about 30 minutes, rotating the pan halfway through.
